Marinating the Beef

Combine the beef with ginger, garlic, salt and pepper in a large bowl and toss well to coat the beef evenly and let it marinate for 15 minutes at the very least and up to an hour or two.

Make the Coconut Sauce

Whisk the coconut milk, Sriracha sauce, sugar, lime zest, lime juice and some salt together in a bowl and set aside.

Cook the Beef

Using a wok or large skillet, heat cooking oil over medium heat. Add the beef and stir-fry for about 2 minutes until the pink disappears. Fry the beef in batches to avoid overcrowding the pan and steaming instead of frying the beef. Remove the beef, drain and set aside.

Stir-fry the Vegetables

Use the same pan to heat the remaining oil and stir-fry the vegetables, garlic, and ginger. Fry them for two or three minutes until the vegetables get slightly tender.

Combining and Finishing Your Stir-Fry

Just before the vegetables are cooked, pour the coconut mixture into the pan and bring to a simmer. Add the cooked beef back into the pan and stir occasionally until the beef is heated through. Remove from the heat, spoon over rice, sprinkle the green onions and cilantro over the top, and serve.
