A Bowl Of Thai Green Chicken Curry

An Authentic and Delicious Thai Green Curry Recipe

Everyone who has ever tried Thai green chicken curry immediately falls in love with the dish. It doesn’t matter what part of the world you’re from. First, Prepare the Ingredients

Start by cutting up the chicken and Thai eggplant. Cook the chicken in the chicken stock or water. Add some of the curry paste and a small handful of the lime leaves to get the flavours started. Once the chicken is done, remove it from the liquid (reserving the liquid) and put the chicken aside.

Preparing the Curry

Put the curry paste in a large pot and start frying it to release the flavours. Once the flavours are released, reduce the heat and start adding the reserved chicken stock or water while stirring to dissolve the curry paste. After about ten minutes, or when the liquid has reduced a bit, go ahead and add the coconut milk while continuing to stir.
You can also add the reserved chicken, Thai basil and other ingredients, including more lime leaves, the chillies and the Thai basil. Gently simmer all the ingredients until the eggplant begins to soften. Taste the dish and adjust for flavour using more fish sauce if needed. You can add a little sugar, but the coconut milk may make it sweet enough. Then, simply serve and enjoy with rice.

Variations

People who aren’t in Thailand or Southeast Asia may not be able to find Thai eggplant in their local markets. You can substitute the eggplant with zucchini, which provides the same sort of texture, or use snow peas, mushrooms, or any soft and mild-tasting vegetable. However, you want to be careful not to overpower the delicate flavours of the curry.

You’ll begin to develop a baseline appreciation of a properly made and flavoured Thai green chicken curry.
